what about contamination of salmonella typhi in ice cream products?
Q. microbial quality of ice cream in kathmandu valley.
Asked by Srijana S - Wed Dec 3 09:29:24 2008 - - 1 Answers - 0 Comments

A. Freezing is NOT an effective way of killing Salmonella. Although Salmonella is sensitive to freezing in water, the protein in the ice cream protects the Salmonella. There have been documented cases of Salmonella infections from raw eggs in frozen ice cream. If you are dealing with the public, particularly sensitive populations like children, you should avoid uncooked eggs unless they are irradiated or "Pasteurized". Microbial Quality of Ice Cream Sold in Kathmandu Results Out of total, 44 samples (61.1%), 49 samples (68.1%) and 16 samples (22.2%) exceeded standard value of mesophilic aerobic count, total coliform count and Staphylococcal count respectively. However, only one sample (1.4%) was found to be contaminated with Salmonella spp. [cont.]

A. Here is a quote from the second one, "The key to avoiding infection by S. typhi is prevention of fecal contamination in drinking water and food supplies. Since the only source of this agent is infected humans, it is possible to control transmission by proper hygiene, waste management, water purification, and treatment of the sick." Read those, hope they help:)

A. You are confusing two different serovars of Salmonella 1.Salmonella typhi - 0=9,12,Vi /H=d,- This causes typhoid fever. The "Vi" component of the serology is the "virulence factor" a polysaccharide in the bacterias coat which allows it to attach itself to the lining of the intestine and penetrate it . When the bacteria does this it can spread via the blood stream and causes "Typhoid Fever".A vaccine against this antigen is used to protect people going to ares where typhoid is prevalent. Typhi also uses "invasin" a protein which allows it to evade the immune response and 2.Salmonella typhimurium. - O=1,4,[5},12 /H=i, 1,2 This commonly encountered serovar does not normally penetrate the gut and only causes normal "Salmonellosis" food… [cont.]

A. Salmonella Typhi lives only in humans. Persons with typhoid fever carry the bacteria in their bloodstream and intestinal tract. In addition, a small number of persons, called carriers , recover from typhoid fever but continue to carry the bacteria. Both ill persons and carriers shed S. Typhi in their feces (stool). You can get typhoid fever if you eat food or drink beverages that have been handled by a person who is shedding S. Typhi or if sewage contaminated with S. Typhi bacteria gets into the water you use for drinking or washing food. Therefore, typhoid fever is more common in areas of the world where handwashing is less frequent and water is likely to be contaminated with sewage. Once S. Typhi bacteria are eaten or drunk, they… [cont.]

Q. What iis the genus and species of Salmonella Typhi (Typhoid Fever)?
Asked by iiiiii - Thu Nov 30 22:43:01 2006 - - 1 Answers - 0 Comments

A. According to the CDC system, the genus Salmonella contains two species, each of which contains multiple serotypes (Table 1). The two species are S. enterica, the type species, and S. bongori, which was formerly subspecies V (19, 21). S. enterica is divided into six subspecies (4, 19), which are referred to by a Roman numeral and a name (I, S. enterica subsp. enterica; II, S. enterica subsp. salamae; IIIa, S. enterica subsp. arizonae; IIIb, S. enterica subsp. diarizonae; IV, S. enterica subsp. houtenae; and VI, S. enterica subsp. indica). S. enterica subspecies are differentiated biochemically (4, 19) and by genomic relatedness (6, 19, 21). CDC uses names for serotypes in subspecies I (for example, serotypes Enteritidis, Typhimurium, Typhi, [cont.]

Asked by Ariunbat T - Mon Jun 29 08:50:29 2009 - - 2 Answers - 0 Comments

A. Typhoid is a bacterium not a virus and this is going to help you as bacteria are easier to identify than viruses. You will have to submit a stool sample to a local microbiology lab. They will grow up the bacteria in the sample using appropriate media that will produce a black coloured colony if Salmonella bacteria species are present. Salmonella should not be present in a stool sample. But it is unlikely you are a Typhoid Mary unless you have had typhoid at some point in the past.
